User Interface is the front end of a product that the user sees. It can be evaluated by determining how easy it is to understand, to what degree it serves its purpose (first you must define what it's purpose is) and by looking at the appeal of its general look. The two main techniques for evaluating a user interface are 1) Empirical Evaluation (testing with users) and 2) Heuristic Evaluation (based on a set of rules).
