Using ‘I’ and ‘Me’ depends on whether you are using the word as a subject or as an object in the sentence.

Using ‘I’ is a subject pronoun. e.g ‘James, Lilly and I went to the cinema.’ As you are the one doing. 

Whereas, ‘Me’ is more objective and passive. e.g ‘Mum asked Harry and me to clean the kitchen.’ Something is happening TO the ‘me’ making it and objective pronoun.

What I find is a useful trick is, write your listing and try to choose the right pronoun. To check if its right, take out the other people you have listed to see if it makes sense. For example...

‘George, Sophie, and I went to the shop.’ If you take out ‘George, Sophie and’ the sentence makes sense. So you have used the right pronoun.

Another example: ‘Matthew asked Greg and me to empty the dishwasher together.’ If you take out ‘Greg and’, the sentence makes sense. So the pronoun is correct.
